This blog is getting dusty….

But you know what? I’d rather not attempt to write anything if I don’t have anything clever to say. That way I won’t waste your time! I’m a genius, really.

I’ve needed to take a little break,  but ya know, when words of wisdom suddenly decide to enter my brain again (like, you know, they did before, duh), I’ll keep spamming you followers with notices of new postings. I can sense your excitement, but please, pace ya’selves.

So what’s been going on? A lot. Immigrations stuff, and DMV stuff and now – apartment hunting. That’s right!  My new mission is to contribute to “Keep Portland weird” AKA we are moving to the Rose City! Woot! New adventures await.

Other than that, I’ve developed a strange addiction to soy sauce (and no, I’m NOT preggers, nor do I plan to be). I seriously put it on everything. Have you ever tried soy marinated tilapia? It’s DELISH! I might have to share a recipe soon.

Aight, folks! I have some more packing to do, and my PJs are calling me. Not because it’s late, but skinny jeans and Netflix don’t mix well. It’s comfort all day when I can. TTYL!

Music Monday: The VLA

OK, you guys. I’ve been a horrible blogger lately. I’ve just been too busy with things… but that’s good, right? And when I have some downtime I watch Netflix. Seriously…. the N and I have a pretty serious relationship going on. I just marathon’ed through “The Killing” (AMAZING) and now, thanks to my lawyer friend, I’m hooked on “Damages”. Thanks, Snehata! I know how fascinating litigation and fiduciary matters are to you but damn…. now I can’t get myself away from my laptop. But you know, it ain’t all that bad. I’m refreshing my memory concerning all the legal jargon, so it’s all good. If anyone wants to discuss anything in relation to negligent infliction of emotional distress or what you might find unconstitutional, ping me! If anything, I’m a pro at everything  categorized as “immigration or visa matters”. Seriously!

If by a miracle you will NOT need my services, I suggest you crank open a bottle of wine and enjoy a glass or two listening to this song…. which also happens to be the theme song of “Damages”. Ding ding!!!!

Wanna meet my “Grapefriend”?

As in, “do you wanna meet my new cool pal that knows everything about wine and knows how to describe the grapes and all the different notes of flavors”? If not, do you wanna meet someone who’s always down for a glass of vino? Ehh.. if you’re still not following (why do you read this blog?), how ’bout a girlfriend that knows how to chug it?

Hahaha, that’s right! My new virtual vino-savvy pal knows everything there is to know about the grapes (of wrath) and their after life. WINE! Everything wine! She’s an excellent writer as well, so check out her blog and maybe you can find your grapefriend too (other than yours truly!)! Yay! Here’s to this Monday being flavored burgundy by a very good edition of Sauvignon Cabernet. Unlike the genius Grapefriend, I have yet to gain tons of knowledge about the red. But I raise a toast to learning! And to vino enthusiasm world wide!

Mmmmm….. Pho!

I’m totally on a soup binge these days. Can’t….get….enough. What’s better than broth? Not much… it’s pure delish. In honor of Meatless Monday, you can totally make a vegetarian version by using veggie-broth and tofu instead of chicken.

4 oz noodles, fresh ones
4 cups low sodium chicken broth or veggie broth
sliced carrot, celery and onion
pinch of five-spice powder or whatever you prefer
1 tbs soy sauce
2 cups shredded chicken/tofu
1/2 cup edamame
1 lime
Cilantro
1/2 cup broccoli

Heat the broth, bay leaf, five spice powder, and soy sauce together over medium heat and simmer for 5 minutes. Add the chicken and the veggies and simmer for another 5 minutes, until heated through. Add the fresh noodles and let it simmer on low 10 minutes.

Pour into 2 bowls. Top with whatever you want – cilantro, and serve with lime wedges, hoisin sauce, sriracha, and jalapeno (for the brave ones). Or bean sprouts! Yumm!
